What keeps an earth-sheltered root cellar at the 0 to 4°C and damp air it calls for all year. It explains how the ground's warmth lags the seasons, places the cellar 2 to 4 metres down with insulation above, tables the thermal behaviour of sand and loam, and shows why a vaulted roof sheds condensation that a flat one lets drip onto the crop. The reasoning is easy to follow, but its equations dropped out in extraction and its measured ground temperatures come from Cyprus.
