Malting And Brewing Ale Process

Its printed title: The Biochemical and Technological Foundations of Ale Production: From Agronomy and Malting to Fermentation Dynamics

Ale from barley field to fermenter. It explains why barley's husk forms the filter bed while wheat, threshed bare, clogs the runoff, gives harvest moisture of 15 to 17 per cent, and follows malting: steeping to 44 to 46 per cent moisture, sprouting until the shoot reaches three-quarters to the full length of the grain, then kilning. Hops and yeast close it, and it sets oxygen at 8 to 10 mg/L. Gene names and enzyme pathways crowd out the brewer's hands, and the harvest pages assume a combine.
