Acetobacter Vinegar Production Guide

Its printed title: The Biochemical Fundamentals and Practical Cultivation of Acetic Acid Bacteria: From Ethanol Oxidation to Cellulose Biofilm Maintenance

The bacteria that turn alcohol into vinegar: how they oxidise it, how they bear their own acid, and the cellulose mother that floats on a still jar, set against stirred tanks, with a table sorting the genera. The practical two-stage ferment from apple peels and cores, with pineapple skins also mentioned, arrives late, after many pages of cell biology. Some of the table text was scrambled in conversion.
