Wedge Press Hard Cider Production
Its printed title: The Biomechanics, Microbiological Succession, and Biochemical Stabilization of Traditional Hard Cider Production
Hard cider from orchard to cask. A rootstock table weighs vigour and disease resistance and favours the American Geneva series, and it suggests a dwarfing interstem for dry sandy soils, Oeschberg pruning and calcium against bitter pit. Then come the wooden wedge press, wild fermentation, racking off the gross lees and ageing on the fine, closing on spoilage by vinegar bacteria and Brettanomyces and on dosing sulphur dioxide from metabisulphite powder by pH. Nowhere does it place the orchard in Brandenburg.
