Botanical Cheese Coagulant Process
Its printed title: Biochemical and Technofunctional Dynamics of Botanical Milk Coagulants: A Comprehensive Blueprint for Harvesting, Dehydration, and Aqueous Extraction of Cynara cardunculus and Urtica dioica
Cardoon and stinging nettle as rennet for a Berlin-Brandenburg cheesemaker. It covers German foraging law (the hand-bouquet rule, no digging of roots), heavy metals in roadside nettles and fox tapeworm eggs on low plants, and argues that a warming climate and the city's heat now let cardoon overwinter there. It weighs extracting at pH 4.0 for use at once against pH 5.5 for keeping, and explains the cardosin enzymes. Its answer to tapeworm is a laboratory membrane filter, and egg and pore sizes lost their units.
