The Opening
Lick the back of your hand.
If you have been working, you will taste it at once. If you have been sitting still, wait for a hot day, or think of something sad. Sweat, tears, blood: everything the body lets out of itself is salt water, and it is salt water at a remarkably steady strength, about nine grams to the litre. A doctor who wants to put fluid into your veins does not use water. Water would burst the cells. The bag on the drip stand holds a brine of nine parts in a thousand, and the body accepts it as its own because it is.
You are, by weight, more than half salt water. The sea you came from, a long time ago, was about four times as salty as you are, and it has been getting saltier ever since, while you have kept the old recipe. The Baltic, two hours north of Berlin, is a strange sea. Rivers pour into it and the narrow gap to the ocean lets little back, so it is barely salt at all: eight grams to the litre off the coast of Rügen, less than your tears. You could not cry the Baltic saltier than it is, but you could nearly cry it as salty as it is.

1 Make a salinometer
You need a way to know the strength of a brine without tasting it, because the tongue is good to about five parts in a hundred and useless above ten, and because a brine that is short of strength is a brine that will go bad quietly. A glass salinometer is a weighted glass float with a stem, and it floats higher in stronger brine. You can buy one now for a few euros and you should, two or three, in a padded box. You …
2 The three brines Safety
Salt is weighed against the whole of what is in the vessel, water and food together, unless the recipe in a later chapter says otherwise. The food is mostly water and will lend it to the brine.

This will kill you if you get it wrong. Here is how not to.
If it goes wrong
The brine goes cloudy, then smells sweet, then foul. The brine was too weak, or too warm, or both, and the putrefiers won. A light brine for pickles may go cloudy from the good bacteria in the first week and smell clean and sour, and that is right. A strong brine for meat that clouds and smells of anything but salt is lost. Discard the brine. Rinse the meat and cook it that day, thoroughly, or discard that too …
